Farmed in the Mediterranean Sea, dorade is a medium-small fish with silver skin and white flesh that imparts a rich, meaty flavor when grilled, baked, or braised. Part of the porgy family, dorade is often to be found in French cooking. We sourced it for the Thomas Keller restaurant, Bouchon, where it is paired with new crop potatoes, artichokes, snap peas, carrots, asparagus & sauce ravigote.

Dorade (sparus aurata), Gilthead Sea Bream 

Taste-wise, Dorade is often compared to Red Snapper. Both fish are mild and meaty with a higher fat content that makes the flesh stay moist and succulent. Dorade is easy to prepare and very versatile. It holds up well to sauces and braises which is why it is often used in Bouillabaisse.

Tuna Tombo has a flavor and texture profile in between albacore and ahi tuna. Like albacore, tombo has a soft and buttery flesh, desirable attribute for dishes such as Crudo or confit. Its flesh varies from whitish-pink in smaller fish to deep pink in larger fish. Our primary supply of tombo is caught in Fiji using a long line

Tuna Tombo (Thunnus alalunga)

The word ‘tombo’ means ‘dragonfly’ in Hawaiian and describes the very long pectoral fins that the fish have. Tombo and albacore tuna are the same species of fish but albacore is caught in the pacific during the summertime whereas Tombo is caught year-round in tropical waters. We recommend pan searing or grilling this fish, leaving the center rare to avoid overcooking.

Traceability.

Fisher people on daily fleets use longlines to catch this tombo. We source our primary supply of Tombo from Fiji but we occasionally supplement this with Hawaiian fish. This fish is currently unranked by the Monterey Seafood Watch Program.

Corvina Sea Bass (Cilus gilberti 

Corvina is a white sea bass that has a mild, sweet taste with a firm, large flaked flesh. When raw it has a pinkish flesh but cooks up white. ‘Weakfish that makes you strong’ 

Corvina Bass belongs to the Weakfish family an unfortunate name as the fish is actually high in protein content. The only discernable reason for the label “weak” is its fragile mouth structure which permits a hook to tear out rather easily. This fish is perfect for any marinades or ceviche!

Striped Bass (Morone Saxatilis), Wild Rockfish, Stripers 

This striped bass is a true bass, not to be confused with the hybrid species farmed in freshwater ponds and lakes. Part of Moronidae family, this fish is large with black stripes running along its silvery metallic sides.  

Open-ocean Raised  

Pacifico is the only four-star Best Aquaculture Practices (BAP) striped bass. The fish are raised in open ocean pens once they outgrow the highly protective and monitored hatchery environment. The fish are stocked with plenty of room to swim and grow in floating sea cages at an ocean grow-out site on Todos Santos Island, Mexico. Pacifico aquaculture practices allow for the reduction of pressure on wild fish stocks while ensuring a consistent supply of sustainably grown high-quality striped bass.

Tai Snapper (Pagrus auratus), Pink Sea Bream, Porgy 

A symbol of fortune and luck

Snapper belongs to the sea bream family and is New Zealand’s most iconic species. Discerning chefs around the world prize this fish for its colorful golden scales and speckled light blue spots. Furthermore, the flesh is light with a pinkish tinge, and cooks up white, with medium flake/texture. According to Japanese tradition, it is the symbol of fortune and is typically used as the centerpiece in celebratory feasts.  

Responsibly Managed

Our fisher people use long-lines from a daily fleet of boats to catch these snappers. New Zealand’s snapper fishery uses the Quota Management System which limits commercial catch to 6,357,300 tons which maintains healthy stock levels.
