Happy Hours Oysters (crassostrea gigas), Pacific Oyster 

Pacific oysters are typically not as briny as Atlantic or Eastern oysters. They are generally sweet oysters with creamy overtones and a slight earthiness.

Pacific Steamboat Oysters (Crassostrea gigas), Totten Inlet Oyster 

Creamy Goodness. 

Steamboat oysters, also known as the Totten oyster, are a classic West Coast Oyster. Compared to other West Coast oysters, the steamboats tend to be slightly larger. They have relatively deep-cut shells where you can expect a mouthful of creamy goodness upon the first bite.

Steamboat oysters grow in the isolated yet well-positioned canals of Puget Sound, WA.

Customer Empowerment.
Oysters, a part of the mollusk family, are filter feeders. This means that oysters filter and clean the water; however, this also entails that oysters take in toxins from their surrounding water. For this reason, it is critical that oysters have 110% traceability in case there is a food poison or disease outbreak caused by the oysters. It is also for this reason that state regulators must diligently test the water quality of each oyster farm to ensure food safety and prevent harm.

Fun fact.
Oyster farming needs no additional input except for water, so there’s no fish feed pollution or chemical additives. Because these are farmed oysters (in comparison with wild collected), there is almost zero risk of damaging the environment when it comes to harvest.

If I had a novice oyster eater in my care and wanted to guarantee a successful first experience, I’d order a dozen Beausoleils.

Eastern Beau Soleil Oysters (crassostrea virginica)

From Miramichi Bay, New Brunswick these are the perfect starter oyster. Because of their carefully controlled, rocking, uncrowded environment, Beausoleil shells are always perfect. Not big—it still takes them four years to reach a 2.5-inch cocktail size—but well-groomed, and so uniform they almost look stamped out by machine. The white shells have a classy black crescent.
